Why not start blogging again… seems like I should be able to put all this “self isolation” to use!
A lot has changed since my last post… it’s been almost exactly 8 years since then. In 8 years my little kiddos have become teenagers. I bought a horse. We have another dog. I’m working full time. I have another sister-in-law and two nephews! You know what’s not changed?? I still love to cook!! And even better, now Erin joins me in the kitchen, turning out her own amazing treats!
So here we are in the midst of a global pandemic. No- this isn’t a movie!! So, I’ve loaded up on supplies and have been turning out what seems like meal after meal these past several days. But we are also eating a lot of leftovers so we can stretch the food supplies as long as possible. While I love cooking, it’s been a while since I’ve had to cook breakfast, lunch, and dinner every day. For everyone. The dishwasher is running a lot, and I feel a bit like a short-order cook. But on the bright side, we are all healthy and together, it doesn’t get much better than that!
This potato tart, with goat cheese and thyme, has been one of the more magical things I’ve made lately. Simple ingredients- wow flavor! And so very comforting… which is exactly what we need right now, no? Recipe linked here. I added a little lemon zest and I think that tipped it over the edge for me! For doubters out there… Scott ate the heck out of this! It was even delicious as leftovers, served with a little salad for lunch. #winning
